• 1 lb ham, diced small
• 1 package Andouille sausage, diced small
• 1 1/2 lbs chicken, diced
• 1 can diced tomatoes
• 1 green bell pepper, diced
• 1 large white onion, diced
• 4 stalks celery, diced
• 2 tbsp chopped fresh garlic
• 1 lb regular rice (not parboiled) - rinsed
• salt to taste
• 6 cups water
• 2 tbsp bacon grease
• 2 tbsp butter
• 2 tbsp olive oil
• 2 tbsp parsley flakes
